Ingredients
- ¤ 1 Pound of sweet potato
- ¤ 1/2 Cup of Butter, softened
- ¤ 1/2 Cup of brown sugar
- ¤ 1/2 Cup of White Sugar
- ¤ 1/2 Cup of milk
- ¤ 2 Eggs
- ¤ 1 Tsp of Salt
- ¤ 1/2 Tsp of Cinnamon
- ¤ 1 Tbl. of Vanilla Extract
- ¤ 1 pie crust
Instructions
cut sweet potato into 4 or so large pieces so it cooks faster, leave skin on, boil for about half an hour or until fork goes into the pieces easily. remove from water, peel skin off with the fork because they will be really hot. i think it is kind of fun to try to get the skin off with my hands without burning them, but maybe you won't.
mash sweet potato in a bowl with butter until it all melts, add salt, brown sugar, milk, eggs, cinnamon and vanilla, then use a mixer until it is smooth.
it will be pretty liquidy probably, so don't worry because it is supposed to be. pour into pie crust, and bake at 350 degrees for 50 minutes to an hour depending on the size of your pie crust. usually i use the ones you get out of the freezer at the grocery store... in that case bake for an hour. basically just until you can stick a knife in the middle and have it come out clean.
let cool for half an hour before serving.
