Instructions
Mix dry ingredients together in a large bowl.
Separate eggs, putting whites into a clean mixing bowl and yolks into bowl with dry ingredients. Beat egg whites until stiff but not dry.
Add oil and milk to flour bowl, and stir just until mixed--don't stir too long! A few lumps are okay. (Too much stirring will compromise the leavening power of the baking powder.)
Fold in beaten egg whites.
Cook as instructed by your waffle iron.
Any leftover batter can be refrigerated and used for pancakes the next day.
