I made this pasta by simply boiling some spaghetti, then draining it and tossing it in a pot with some nice, fresh tomato sauce infused with basil. Use a roasting fork to swirl it for a nice presentation!
Remy · I think you've made the nicest looking spaghetti I've seen. I will definitely try this next time.
Oh, I have a question. How would you recommend incorporating sausage (or in my case vegetarian sausage)? Would you spin them up with the rest of the noodles and let them lie wherever they want, stuff them on the inside, tuck them into the sides, or something else?
Hawk · Remy, what you could do with a more chunky sauce is serve the dish in a pasta bowl (my pasta was on a big flat plate) with some of the sauce first on the bottom, then the rolled up pasta, then more sauce on top. I recall seeing Gordon Ramsay do this with one of his dishes (probably on youtube somewhere).
The sauce I used here was very flavourful but thin, so it absorbed very well into the pasta with a couple minutes in the pot after it was drained. Once it's incorporated the sauce, just do a final toss with a bit more olive oil and roll it up.
WheresTheGrub · Vegetarian, eh? Have you ever tried adding garbanzo beans to your 'mato sauce? simply 1/2 can of garbanzos and blend in a processor or blender. Gives the sauce a cream cheesy texture (used this when i was a vegan a while back)
