Red Velvet Ice Cream Sandwiches

I found this post the other day and was so inspired that I thought I would post it here for anyone who has not seen it.  I have permission for this repost, so please, read on, check out the recipes, and click through to her site for a full description of this masterpeice.



These ice cream sandwiches are comprised of two recipes: Red Velvet Cookies and Cheescake Ice Cream.  The instructions for making both of these are here, check em out, the instructions for making the ice cream sandwiches should be pretty straight forward, but if not, here are the original instructions:

1. Pull ice cream from freezer and allow to soften slightly at room temp
2. Place a 2oz scoop of ice cream on one cookie. place another cookie on top and press slightly to sandwich together. Optional: press chopped pecans into the exposed ice cream
3. Wrap individuals sandwiches in plastic wrap and freeze until ready to serve
