(I Want) Chicken Potpie

I have been in the mood for some serious comfort food lately.  Last week that translated into an unwavering craving for chicken potpie.  I'm not the kind of girl who can just run to the store and pick on the frozen version. Ooohhh no.  That would be way too easy.  I busted out the rolling pin and chicken thighs and got cracking.  

I made this beauty in my trusted cast iron skillet.  It had slightly less fat because I used low fat milk in the filling instead of whole fat milk.  I sure did make up for the low fat filling with the buttery crust.  Outta sight.  So buttery and delicious.  Packed with peas, carrots and chicken.  Meal enough for four hungry souls, or a week of leftovers.

Two things you should know about this pie:
1. The smells coming from your house are sure to make your neighbors jealous.  As in my case, they may come to the door with outstretched arms and empty plates.
2.  If you're trying to charm a hungry Texas boy, home cooking, like Chicken Pot Pie is totally they way to go.  Fact.

jessica · this looks so yummy. i once made jamie oliver's "quick and easy" chicken pot pie and i swear to god it took me 4 hours. so now i'm scared to try another one!

alice · This looks amazing!  I haven't tried making crust since I was little and my mom would help me, so I'm pretty intimidated, but maybe I can get Lar to team up with me on this.

Joy the Baker · Fresh, buttery crust is actually pretty easy to throw together.  If you have someone to help, it's even easier.  Go for it!

alice · This is no longer true!  I had a fairly successful go at this pie, although I don't think my crust turned out exactly as intended (but Erich said it was good).  I will post a blog about my experience once I get the photos downloaded.

Thanks for the recipe, Joy!  I had a surprisingly good time making it and learned some great things along the way; for example, I the shredded roast chicken was super delicious and will be great for the next time I make a chicken salad for dinner.  Also, I am excited that I have some of the filling left over and plan to make some pasta to accompany it for another meal this week. 

Also, Lar, didn't we pack up the pastry cutter when I moved?  I cannot find it for the life of me.  This may have been where my crust went slightly off kilter.

lara · Hmm. I thought we packed it, but maybe not. Anyway, without one, you can always just use a couple of knives or your fingers. I usually mostly use the pastry cutter and do the final finesse work with my fingers.

Anyway, sounds like you figured it out. I'll have to make it soon!
