Did the To-Go Cup Ruin Espresso?

Ruin is too much yes, but after my 3:30 Americano run, it dawned on me that coffee used to be a lot more interesting, before it was freely available in paper to go cups.  My reasoning here:

There used to be, and still is (in a few places) a valuable art in layering a nice espresso beverage.  I know you know what I'm talking about.  You order a latte, and it is freaking beautiful.  Darker to lighter in a nice glass cup.  If you get really lucky, you get a nice design at the top.

Hrm, I want one like this now, anyone have a good cafe in the east bay that still does this?

Justin · I had a stint as a Barista at Barnes and Noble Cafe and got hooked on Iced Caramel Machiattos because they were so damned nice to look at.I think Gaylords still serves their expresso drinks in glass, and if not I'd bet they would if you asked. Au Coquelet in Berkeley might as well.

William · Dan I totally agree with you. There's nothing like sipping from a nice ceramic cup, and it always bums me out when I have to go for paper instead, especially with a foam-blocking plastic top. Gaylord's on Piedmont Ave. and Cafe Di Bartolo on Grand Ave. both still serve in ceramic by default, and make consistently great espresso drinks.

Aimee · I dunno where to get a nice layered froofy drink, but I totally want to see if I can still do it. I was a barista at the Santa Cruz Coffee Roasting Co. before they called us baristas ('cause I am olllllld), and we prided ourselves on a nicely layered latte.I need a better espresso maker. Mine doesn't have an insert so I can steam milk without having to make an espresso shot, and I much prefer my lattes to have coffee rather than espresso.
