Blueberry Mango MiniPops aka Save Me From August

August always has a few casualties in my life.  Last August I was certain I was going to be the victim of my old old old Volvo.  One day, mid August, the windows of my Volvo mysteriously refused to roll down.  Combine that with the fact that the air conditioning wasn't working, and the air temperature was pushing 100 degrees on a breezy day, and I was absolutely convinced that I would perish in my car.

This August, my patio plants have met their tragic end. It would seem that sometime in early July I flat out refused to recognize the existence of my patio and all the living plants on it.  Just last week I  was finally forced out to said patio to find the sun charred remains of my plants.  The only survivor- my favorite Jade plant whom I have since nursed back to health.  
While I am most certainly not on my patio in the dead of August, you can either find me at the beach, planted in front of my air conditioner, or standing in front of my freezer trying to wish my frozen peas into something more delicious.  
Finally tired of trying to wish my peas into dessert, I grabbed a bag of frozen blueberries and frozen mango chunks and threw together an easy and healthy mini popsicle recipe.
 
The recipe couldn't be easier.  It's like making two separate smoothies, pouring them into tiny paper cups and freezing them.
Start with a cup of each kind of frozen fruit you're using.  If you want to use fresh fruit, go for it!
Blend it up with half of a 6oz container of yogurt, 1/3 cup of milk, and a tablespoon of sugar.  
Pour the first mixture into the paper cups (I used tiny 1/2-ounce paper souffle cups) and freeze for 30 minutes.

Layer with the second fruit mixture, stab with popsicle or lollipop sticks and freeze until solid.  
Next time I gaze into my freezer, I'll have a cold healthy snack staring back at me.  Further August tragedy averted.

I love how the paper cups give them a  pattern--bonus!

dan · Ok so, we are in the middle of a week long heat wave and right now i cant stop looking at these photos while i sweat from anywhere my skin touches other skin.
